Rosemary Ground Beef Bolognese With Baby Spinach & Brown Rice Pasta

Part of “going gluten-free” is making sure I take these healthy habits I’m learning from eating KLEAN LA and integrating them into my family life and my family food! While I’ve been on the “diet,” I have found myself making meals that that are more balanced and that are less laden in the things that I’m not eating (evne if I’m not eating them). When Kiki of KLEAN LA suggested I try out the family meal, I couldn’t resist.

The family meals come with 4 servings of a lean protein, complex carb and vegetable, plus 2 sauces to create a healthy and high quality meal. Not only have these family meals proved to be extremely convenient, but I feel so great knowing that I’m feeding them free-range, local, and grass-fed meats. Everything is fresh, and guess what, everything tastes like I made it. In some cases, this might be a bad thing, but since my son happens to think I’m the world’s best cook (this is no joke and an accolade I take very serious), it made me so happy when he was digging in to Klean’s Rosemary Beef Bolognese with Brown Rice Pasta and Spinach and declared it again. (Sorry, Klean, I took total credit for your goodness on this meal!)

Another really memorable family meal was the Almond Crusted Chicken Tenders. DELISH. Again, something he could not get enough of. When Chef Jodi of Klean shared the recipe with me, I couldn’t believe it– it’s so easy! It made me realize eating and cooking gluten-free is really not as challenging as it seems. Here’s how to make it:

Chicken Tenders CHICKEN TENDERS OR NUGGETS

Make your kids healthy gluten & preservative free chicken “nuggets” or “tenders” by using almond meal and chicken breast. If you have a nut allergy, use coconut flakes!

  1. Preheat oven to 350 degrees.
  2. CUT chicken breasts to desired shape and size nugget or strips.
  3. TOSS the chicken with a small amount of olive oil to coat.
  4. SEASON almond meal with sea salt, black pepper, smoked paprika and garlic powder in a small separate bowl or tray.
  5. COAT the chicken pieces with the almond meal mixture and place on a baking sheet.
  6. BAKE for 15-20 min until cooked through and serve with Honey Mustard Dipping Sauce!

HONEY MUSTARD

We love Spicy Grainy Mustard or Dijon but a simple deli mustard will do. You can adjust the amount of sweetness by adding more honey or a few drops of stevia. Yield: 32 oz 8 oz Filtered Hot Water 2 oz Honey – stir dissolve in hot water 24 oz Mustard of your choice. Mix and serve with Chicken Nuggets!
