food klean This past week marked my last week of a partnership with KLEAN LA… which meant my glorious 24 day run of all things gluten and soy free, was coming to an end. But guess what? I had so much success and am feeling so great, I’m not going to stop! In 24 days, which basically spanned over 5 weeks (as I scheduled my deliveries to Monday-Friday), I lost about 6 pounds and feel fantastic! With 47 days until “the big day,” *(but who’s counting, really) I’m not stopping now!

There is obviously a big financial consideration when it comes to choosing to do a diet delivery service. But knowing that I could rely on Klean to deliver 4 meals a day for me, and one weekly family meal (4 servings of a lean protein, complex carb and vegetable plus 2 sauces — which ended up lasting sometimes for two meals), actually turned out to be cost effective. Even better, I loved that we were all eating free-range poultry or grass-fed beef and organic fruits and veggies. The boys loved the dishes and I confess, I totally took credit for most of them.  Shhh….

So delicious! Felt like a lady who lunches! Curry Chicken Salad, With Romaine, Lentils, Currants & Fresh Mint, Savory Balsamic Vinaigrette

Though I’ve decided to cut out dairy and egg because I seem to have an immediate bloated reaction to them these days, I did try a few days of breakfast on Klean, and let me tell you, they were DELICIOUS. Some of my favorites, #1 Mango Puree overtop Organic Greek Yogurt with Raw Cacao Nibs, and Coconut Steel Cut Oats, and #2 Sweet Apple Cinnamon Frittata, Orange Wedge and Cinnamon Currant Oats.  Klean knows how to do Fritatas! Below is a recipe for their savory egg-white frittata which is delicious too!

After having the flu for the last 5 days (and not eating “Klean”– think Soup, Juice, noodles, crackers and more juice), I’m soooo excited to jump back on the Klean train and look forward to sharing my “after” photo with you. Think me…long, white dress… long lashes… you get the drift.

Savory Turkey, Spinach, Sundried Tomato Frittata SAVORY EGG-WHITE FRITTATA

This is a FANTASTIC way to make eggs ahead of time and can be easily tailored for picky palates of kids and adults!  This is a healthy alternative to Quiche, which is typically more cream and crust than eggqhites which are a great source of protein.

Yield: 4 servings

8 or 9 inch non-stick skillet

24 egg whites, preferably organic

(If you are using whole eggs, or a 5 eggwhites : 1 whole egg ratio, then whip the eggs and add 2.5 cups of whipped eggs to 9 inch skillet)

For this one, we used: (About 1 cup of each per pan will do)

Ground turkey – cooked with onions, sea salt, pepper, cumin and thyme.

Raw Spinach – torn a bit to disperse evenly in pan.

Sundried Tomatoes – chopped.

Other combo’s that work well:

Onion, Diced Tomato, Kale, Fresh Basil

Leeks, Mushroom, Sundried Tomato & Spinach

Process:

Heat oven to 350 degrees.

Whip the eggs with a whisk or hand-blender until very smooth.

  • Season with Salt / Pepper
  • Set aside.

Gather all vegetable ingredients you’d like to use and set aside.

If you are using ground turkey (or extra-lean beef) cook it up with some onions, sea salt, cumin, thyme and black pepper.

Once meat is cooked, add eggs + veggies.

  • If not using ground turkey, just smear the skillet with a drop of olive oil or spray it with nonstick cooking spray and add the eggs + veggies.

Give it a gentle stir and place in oven for 30 minutes or until top is browned and edges pull away from sides of pan.

There should be no liquid on top.

Gently run a spatula along edge to remove frittata from pan.

Slice and serve!
